I would wait reports from users are that the current gen integrated graphics isn't powering these displays too well. Might want to hold on for the next generation

There is UI lag, but I don't think its because the integrated graphics are not good enough. I think Apple's code for UI animations is not well optimized. I base that conclusion on how well everything else works.. its only UI animations that are laggy. Recent updates have improved that consistently as well, though its still there if you compare to the macbook air or non-retina pro.

Too bad the 13" only comes in dual core. If I'm in the market, I would pay a bit more for the 15" with quad core.

Well to be fair, it's $3749 retail.

To be more fair, the I7-3820QM Processor alone is $568 from Intel. And when I google 768GB SSD, I don't find anything/anyone other than apple selling one.
The closest comparable is OWC selling a 960GB SSD for ~$1120_______________

You're comparing upgradeable solutions to Apple's backwards approach of soldering NAND ICs directly to the PCB. They aren't the same things at all.
Essentially, they're using the ICs from two 384GB SSDs without any over-provisioning. Figure the actual cost of the whole SSD setup is significantly less than $400 to produce.

The SSDs in the Retina MacBook Pros are no less interchangeable than a standard 2.5" drive. They're just not standard 2.5" form factor, 'cause those don't fit.
OWC even sells upgrades for the Retina MacBook Pro drives:
