I'm looking to put in a hitachi 5k500 250gig 2.5" sata hdd into a xbox360 hdd enclosure. I'd done some research and it seems Hddhackr only works for WD drives. Are there any other tool that will allow me to make this work?

I know if you had a jtag you could but not a 100% sure if it work with non jtag consoles.

WD drives only, and even then only certain models.
As REALG123 said, any drive works if you have a JTAG box.
