I'm going to be visiting multiple countries on an extended family european trip. This seems much less expensive than getting a roaming plan for each country through Bell or buying sim cards at each stop, since I'll be in & out of most places quickly.

Roaming charges are capped in the EU. http://en.wikipedia.org/wiki/European_Commission_roaming_regulations#Prices
Since July 1 (last week), the costs have dropped once again. It is 0.29€/min to call within the EU, 0.08€/min to receive.
Buy a pre-paid SIM in any EU country and off you go.

My problem is that I will be visiting Israel too which wouldn't be included in those rates. But it is worth considering.

Maybe pick up a card when you get to Israel? Or continue to use your EU SIM until it runs out of money?

I've had really good experience with these guys:

Check it out and see if the rates work with where you're going. Different cards have different minutely rates and features (e.g. free incoming).
