I Recieved a job offer out of the province, but instead of going throught the hassle of selling my car, is it possible to transfer the title of the car to my fathers name, while keeping the lien on in my name and continue to make payments.

No, thats considered fraud.
To facilitate such you must own the property. Due to the fact that there's still an existing PPSA registered lien on the property the property is legally owned by the financier.
