Newbie Question - Tire Sizes - What can you put on a car?!?

I have a 2006 Honda Civic Coupe LX.

with the current stock P205/55 16 tires ...

now here's the stupid / newbie question ...

can I put different size tires / wheels on the car? i.e. for snow tires?

I would assume the bolt pattern on the rims would have to match, but would P205/60/16's make a big difference? can it even be done?

any info would be greatly appreciated.
