im embarrassed to say ive never had the chance to have fresh tuna , but that looks really good.is there anything else you seasoned the tuna with asides from the crusted sesame ?

I marinated it in the fridge with some soy, sesame oil, crushed garlic and ginger.

Still in business - it was Co Cham!

I usually go to May Lan a few doors down. It's a little more expensive but I like their bread better.

Was watching Bobby Flay's throwdown, he was up against some Chicagoan deep-dish dude...thought hmm, never had deep-dish and I'm not going to Chicago anytime soon - why not kill the afternoon and give it a shot?

So, I basically improvised the dough
-Flour, salt, olive oil, veg. oil, butter, a little crisco (2 tbsp maybe), water, yeast yah - key for deep-dish is butter and oils, no doubt.

Gave a shot at making my own sauce
-Saute some onions, garlic, basil (picked from the garden, mind you) ground up sausage, let it cook a bit, then added some diced tomatoes, cooked the water out, then brought out a hand-held food processor to make it a little more saucy.

So yeah, assembled it - added some of that sausage, parmesan, feta, olives. Popped it in and said, whatever happens - happens.

Pulled this bad-boy out...

Now, I know some people may find this downright repulsive - keep it to yourself. If anyone can give me some pointers, please do...not saying that I'm giving this a shot again, but I for one didn't mind it...just wished the dough was a bit more tender and chewy, found this too crispy.
