Unfortunately, when you start saying that 8.1MP seems low and that camera settings may be the reason for your concern really starts to point to a user problem rather than camera problem.
What exactly don't you like about the pictures your current camera takes? What type of environment are you taking pictures in?
What are the settings you use on the camera? (Please don't say AUTO)
I don't want to jump to conclusions, but so far, replacing the camera may not be helpful to your situation....

Maybe your camera's settings are wrong?
If you want some advice on a new camera, at least post a rough idea of what you want to do with it and your budget. Otherwise you're not going to get any useful responses.

This is 4 megapixels from a Canon G3. Five year old technology, less than a year experience.

Prints 14X20 with no problems.

OP,
Without knowing what your budget is, it's rather hard to make a recommendation. You give me this feeling that a DSLR would not be suitable for you. If I were to get a point and shoot, it'll be either the Panasonic LX3 or Canon G10.
