costa rica - all inclusive or do it yourself?

My girlfriend just accepted an offer to go volunteer in Costa Rica in June. I'd like to go spend the last week of June with her. I was wondering if its possible to buy an all inclusive package without the flight (because she's already be there) or if she could get an all inclusive, but leave a few weeks earlier than the start of her hotel stay on the same ticket. Or would anyone suggest against the all inclusive route and reccomend something else?

My brother and wife booked a you drive tour through this web site in Nov 06. Arranged there own flight,,,, and said it was amazing ,,,, saw alot,, did alot.
