Fair & Easiest in Person Transaction

What is the most safe and easiest way to do an in person transaction(+$500)? What are some people's expereinces/advice? What is fair for both sides? On here or ebay/other auction. . .

Go to a bank and do the money transfer in front of a teller or bank camera. Therefore, lots of witnesses and video proof if something goes wrong. At the very least, do the exchange with backup and in a crowded mall in daylight.
