Do you mean DisneyLAND in Anaheim, California
or
Walt Disney WORLD in Orlando, Florida?
Big difference.
Either way, you're not going to find much of a deal. Christmas is high season for Disney so prices will be at the highest and attendance will be at the max.

You are travelling peak holiday season and booking late so really hard to find any deal on flights now. The big problem is the outbound flight because prices are way up there now.

You're really cutting it close. But the first few days of your time frame is just before the real peak. The peak really starts on Dec. 24, then till few days after New year.
We've travelled the week before X-mas, and flew back on X-mas day. The crowd does begin to build up, and the park hours were increasing a bit, then Dec. 24 to the few days after X-mas has the parks open at the longest hours. But those hours are still not as late as the summer time hours. The difference is the weather is colder around X-mas and the crowds do go home earlier.
You didn't say where you're travelling from. If you're close to the border, driving then flying out of US can sometimes save lots of money.
If you want to go to WDW, the airport is Orlando. If going to Miami (few hours south, guess that'll be for a different purpose), can consider flying into Fort Lauderdale.

This morning I found a flight for $145 inc taxes from Buffalo - Tallahassee if you are able to leave on the evening of Dec 20th. There are earlier flights with Delta as well for the same fare. I also found a nonstop flight for $120 from MCO - BUF on Dec 26th. You got your return trip for $245 at peak travel time. If booking don't wait because I'm sure it will not last long. The drive is 3.5hrs from Tallahassee to Orlando. You can fly back from Orlando. You could bid for a hotel on priceline and stay in Tallahassee the night of Dec 20th and then drive to Orlando the following morning. Had a quick look on betterbidding and you should be able to get a 3* or 3.5* hotel in Tallahassee for $45 - $50 based on winning bids that I saw.

Your best deal on a rental looks like through Budget using travelocity code x474200 and E-Coupon MUPZ044 for $40 off. Total for an SUV is $251 inc taxes after e-coupon is applied when return vehicle. This is picking up at Tallahassee airport (TLH) at 11:30PM Dec 20 and returning at MCO at 12:30PM on Dec 26th.
You could also try bidding for a rental on priceline.

Maybe should start a separate thread.
Weekends are always more crowded, so Dec. 15-16 will be crowded. Then the week before X-mas starts a little lighter, but gradually gets more crowded, until the weekend DEc. 22-23. Other than the first weekend, you'll miss the largest crowd of the X-mas time.
With 5 yr old, he won't be able to go on a lot of the rides for older kids (by height, weight, suitability), but will still enjoy a lot. The weather will be colder, so won't be going to the rides with water or splashes, or going to water/splash parks. Between you and your wife, you can take turns to go to the next ride and get the fastpass. Or maybe you should be the one (as many fathers do), to do the running to get the fastpass. It really helps.
There can be a lot of walking, so either you'll have a stroller with you, or be ready to carry him once a while. They'll get tired and will fall asleep well before you and your wife want to leave the park, thinking you've paid a lot of money for the park ticket. But hey, you got your kid happy and tired, that itself is priceless.
