Have some Questions.
The family van MVP 2001 seems to have excessive vibration in the steering wheel above 60-70 clicks; is this due to an alignment problem? If so, how much would it be to have this done?
Also, from gear 1 to gear 2, there is a noticeable jerk as the delay. There is a technical name for this which I cannot recall but how much is this going to cost to get fixed? Not a big issue as far as I am concerned unless it is doing harm to the engine that is.
I'm looking to get these fixed if it's not too costly then trade it in for a new car. In its current state, I don't see many dealerships giving too much for it.

This would be a tire or suspension issue, Alignment would not fix this alone.
Until it is examined by a mechanic, no one can extimate repair cost.

Same applies here. From low trans fluid, to overhaul, costs can't be determined without further investigation.

If your intention is to trade it in, why spend the funds to fix it? At 7 years old, the dealer would likely turn it over for auction and dispose of it.

At 7 years old, it's basically a piece of junk? I'm trying to get the most out of it right now and get a good trade in value for it.
Any suggestions?

I was not implying that is was a piece of junk at 7 years old. But taking a quick browse on Autotrader, listed prices range from just under $4,000 to $10,000, giving a mid point of $7,000. If traded on a new vehicle, I suspect that the dealer would give the van a visual inspection and then a value to you, probably in the low range listed here.
If you spend $500 or more to repair it, are you going to recover that cost when trading it in?
On a private sale, having the vibration repaired may bring a higher price.
