How do you store oven-dried tomatoes
I always wanted to make them but I'm not sure what's the proper way of storing them. Do they freeze well? Or should I store them in a jar with olive oil and put in the fridge?

I store them covered w/ oil.

If immersing in oil, try and use the ingredients soon after, and to adhere to good sterilizing of the container.
Not to sound dramatic, but there are some rare circumstances where vegetables preserved in oil can lead to botulism.

I've used zip lock bas for short term storge with no problem. Mostly I use glass jars, or plastic containers with tight lids. I will put some in oil but I use them up in a matter of days (keep in the fridge) This year I did up 5 bussel baskets of tomatoes. Hope this will last us until next fall.
