After doing a bit of reading on these two boards...
the X79 has some serious hardware problems
the z68 SLI does not work with certain power supplies (you need a v2.2 PSU) and the new BIOS for ivy bridge support is an absolute mess. unless you're using a sandy bridge chip you cannot even get the board to post with an ivy bridge. you need to use a sandy to post and flash the bios before using ivy. also, you cannot clock the ram past 1866 (and even clocking to 1866 is a challenge). 1600mhz is stable on this board. many other bugs but these are the main concerns.
the evga z75 seems like the only decent board they have put around that price range (99 dollars at tiger direct after 20 MIR)
however, even that board is plagued by slow 4k sequential write speeds. but the ivy bridge support is there for anyone wanting to use 3rd gen cpu
can't comment on the other boards... I'm using a maximus v gene (z77 not z68) and it works great. That price seems alright for a mATX. . . but if you want a budget board (and want to take a risk/ possibly waste your time) try the evga z68 micro also at TD for 53.99 after rebate.
