I am looking to get my knives professionally sharpened.
Does anybody know of a place, preferably downtown T.O.

I got a guy driving around my street who sharpens all blades.
He was here around lunch in his van, and the neighbours got him to sharpen their lawnmower blades.

DO NOT get your knives sharpened by those guys in the trucks. Sure it may be OK for your tools but for a kitchen knife, especially if its an expensive one, do not do it.
I get my knives sharpened at Cook's Place on Danforth Ave.
Another well known place to get it sharped is at Nella Cucina at 876 bathurst st.

Nella is only $4 per knife + they are well known. I go there.

What kind of knives do you have?
There have been horror stories about Nella, but also happy customers. It's up to you to decide if it's worth the gamble. If your knives aren't super expensive, it wouldn't hurt.

If you have Wusthof or Henckels knives, you can go anywhere. But if you have nice Japanese knives, especially ones with a single edge, I would look for a Japanese shop because they can seriously damage your knife.

I have a calphalon set and two nice Wusthofs.
I want to bring in the calphalon knives as I cannot seem to get a good edge. Might be that my wife loves to mangle my knives as she tries to cook.

aser where do you get your knives sharpened or do you do it by yourself? Last time I sent it to cook's place, they send it to a guy from Lee Valley Tools apparently. He did a good job repairing a bent tip but the knife itself isn't really that sharp.

I do it myself w/ multiple Japanese water stones, of various grits. There is a learning curve, but once you get a handle, it'll be better than any result you get from any shop in Toronto.
If sharpening freehand w/ stones is intimidating, then I suggest a lansky pull sharpener or edge pro. Or even a Chef's Choice electric sharpener if you're just a home user. The latter is the easiest to use, but has its drawbacks (wears down your knife quicker). For a home user, that shouldn't matter too much.

I used CA Paradis once to sharpen my Henckel knives...when they still had a store in Hull. The guy did a really rough job on them...
Anyhow, I purchased a Chef's Choice Model 130 knife sharpener from Paul's Finest a couple of years ago after reading some really good reviews about it... and it does a pretty good job but there's a certain finesse required to get a really nice edge. I would recommend this machine.
