Motherboard is not overkill. Make sure to get the i5-3570K if you don't get a graphics card as it's integrated graphics (HD Graphics 4000) is a lot better than the i5-3570's.
Power Supply is probably a little heavy. I am guessing you could get away with a 400W to 450W PSU. You can use the following site to calculate power requirements:
http://extreme.outervision.com/psucalculatorlite.jsp
Be wary of buying a cheap power supply because having a poor power supply can cause a lot of grief. I usually only buy power supplies from tiers 1, 2, and 2b from the following list and I also check user reviews at Newegg:
http://www.eggxpert.com/forums/1/323050/ShowThread.aspx
I can't really help with your other questions.

I'm looking to build a computer for light gaming (D3/shooters) and some video/photo editing. Does anyone know what kind of build I should be looking for (price range-wise) or if there's an existing build I can follow to build the comp?

Can I get a quick opinion on the following low budget build (light gaming):
NCIX Bundle Deal Intel Core i3 2120 Dual Core CPU & Gigabyte B75M-D3H Motherboard $164.99
Antec Three Hundred Mini Tower Gaming Case 300 ATX 3X5.25 6X3.5INT No PS Front USB & Audio $44.99
Kingston HyperX KHX1600C9D3K2/8GX 8GB 2X4GB DDR3-1600 XMP Dual Channel Memory Kit $37.99
OCZ ZS Series 550W ATX12V V2.2 24PIN ATX SLI Ready 80PLUS Bronze $59.99 + $20 mail in rebate
Total: $315 (all parts from ncix)
I'll be reusing my current WD 1 TB blue drive and an ATI Radeon HD6670 1GB DDR5 with this system.
If need be I'll upgrade the cpu and video card, but not anytime soon.
EDIT: This will be an upgrade to my current Dell Inspiron 531. Would it be inadvisable to reuse the case from that system? (Yes I'm being cheap) http://www.pacificgeek.com/product.a...1&ID=98868&P=FLast edited by macalin; Sep 12th, 2012 at 04:42 PM.

Thanks for pointing out the voltage. It was 1.65 which the mobo wouldn't have been compatible with. I've since swapped the ram with this set: Corsair CMZ8GX3M2A1600C9 Vengeance 8GB 2X4GB DDR3-1600 Memory Kit for $39. I'm most likely going to reuse the case from my Dell Inspiron 531, and go with this psu: Thermaltake TR2 500W Power Supply Cable Management ATX12V V2.3 24PIN With 120MM Fan $45 for a total of $250 pre tax.
