Veggie Garden Rice
Onions, rice, salsa, stock, cumin, corn and kidney beans cooked and ready to eat!
Or onions, rice, salsa, stock, cumin, corn, and kidney beans cooked and ready to eat stuffed inside a bell pepper.
Or, onions, rice, salsa, stock, cumin, corn, and kidney beans cooked and ready to eat with a little Monterey Jack cheese melted on top.
Or… OK, maybe I’ve gone too far, but it’s hard not to with this veggie garden dish. Perfect as the main dish at your breakfast, lunch,
or dinner table, or as a wonderful side to grilled chicken or veggie burgers.

OPTIONS:
Cook rice and use as a stuffing for bell peppers or eggplant halves. Top with bread crumbs and bake.
Add a small can of chopped olives to cooked rice.
2 cups converted white rice, 1 14 oz can of kidney beans,
washed and drained drained and rinsed
1 cup finely chopped onion Salt and pepper to taste
1¾ cups vegetable stock Freshly chopped cilantro,
1 cup store bought salsa parsley, or green onions for
1 tsp ground cumin garnish
1 14 oz can whole kernel corn,
drained
Coat a nonstick sauté pan with cooking spray, heat, add onions, and sauté until soft. Add rice and sauté for 2-3 more minutes.
Add stock, salsa, and cumin, stir to mix. Cover and simmer for 8-10 minutes.
Stir in corn and kidney beans. Cover and simmer until all the moisture is absorbed. Add salt and pepper to taste.
Sprinkle with cilantro, parsley, or green onions.

Nutritional:
Serving Size 8.4 ounces
Servings per Recipe 8
