Need some good recipes.

Well, I'm wanting to cook a bit, I know, google, I have found a few good sites, but, I'm asking, what are some of your favs?
I guess, well, what are some cheaper ones..nutritous ones, fancy ones, for maybe special occasions.

I plan on starting to like, try some ones off some the cooking sites, but..u know first..I just wanna try some that people recommend first. Come on Trini..I know u frequent this forum :cheesygri

it might help if you give an idea of what kind of foods you like?

you want easy to cook or it doesnt matter?

and speaking of trini, he gave me a recipe a while back that is awesome! i was actually just thinking today that i have to make it soon. thanks again trini :)

Well, I was going for..I'd pretty much try anything (provided it isnt something CRAZY expensive, or would kill a horse.)
Since theres lotsa Chinese on the board..maybe I'd get a few chinese recipes.
Easy would be cool, but, I'll still go for a harder dish, if it tastes good..or for special occasions :cheesygri that can impress lol. When I was younger..I was pretty good at cooking...

People can rate them and write reviews.
You can search by category (breakfast, appetizer, quick & easy, etc.), keyword, or by ingredient.

Try this:

Dijon-Horseradish Sauce

This sauce really elevates any dish and makes it more elegant than it really seems. Here goes.

Get some good dijon mustard and horseradish. Also, chop up 1 half of a medium onion very finely. Saute the onion with 1 tbps butter until soft and translucent over medium heat. Then, crank your heat up to medium-high and add another tbps of butter, then add 1.5 tbps of flour to make a roux. Make sure you stir quickly and rapidly to ensure that the flour does not stick and the roux for about 2-3 minutes. It should turn a very light brown and smell nutty. Then, gradually add 2.5 cups of milk (skim won't work well), and whisk it with the roux. It should thicken to form a sauce-like consistency. Then, add a regular spoonful of dijon mustard and half a spoonful of horseradish. Mix together and you have an awesome versatile sauce that tastes FANTASTIC on baked/steamed potatoes, salmon, chicken, beef, or pork. And, your only source of fat is the 2 tbps of butter and milk. This is enough drench 3 plates with this delicious sauce.

Try a good basic risotto recipe.

Takes a little getting it down ... but once you do you've got a recipe for life and it's an impressive dish for the ladies ... or the men.

I don't bother using any wine and it works great. I also subscribe to the cut-to-the-chase philosophy that some chefs have used. I don't constantly stir like mad to get that creamy texture ... but i'll have the heat a bit higher and stir less and I still get a decent texture with less time and work involved.

I use good quality cheese and some butter, dill, and whatever you've got to slap it. Mushrooms, sugarsnap peas, asparagus, chicken, whatever. It's a great dish to incorporate whatever you have left in your fridge.

My favourite recipe right now would have to be a balsamic red wine reduction. Very versatile sauce for most of the red meat and it's easy to make, though it takes some time for the reduction part

- sautee 1 cup of sliced mushroom, 1 shallot (or onion), finy sliced and a couple of sprigs of rosemary with butter until golden, and tender, in medium heat. take out the rosemary sprigs.

- reduce heat to medium low. Add 3/4 cup of balsamic vinegar and reduce until it's syrupy

- add 1 cup of red wine (cab. sauv. works great) and reduce to about 1/4 cup.

- add 2 cups of chicken or beef stock and reduce the total volume to half
- (optional) whisk in a few cubes of cold butter into the sauce to add more glaze and flavour

And there you have a very good sauce for your steak

What do you mean, boil it down until the liquid's evaporated off a bit?

Here's a favorite, when u need a dessert quickly.

Scoop 4 Tablespoons of fruit jam (I prefer raspberry) into a sauce pan and heat until liquified. Add 1oz of white rum and stir..

Now u can pour that over ice cream, berries, spongecake with berries.
Its very versatile, and the rum kicks up the flavour !

Great idea. This is a good example of how simple something can be that will make a big difference in presenting dessert, even something as simple as vanilla ice cream.

Haha, blink, I found that caramel popcorn 1 2, I just made it, its in oven now. I wanna get a springform pan and make a cheesecake some time! But, I guess, any1 have..some good fancy recipes? Like..for supper...if theres a good dessert 2 post it also! But..ah, for some reason for me harder to pick something for supper lol..

Edit: Thx for the sause recommendation, an dessert topping, I will maybe try it..but I dunno..I'm not quite 18 yet :cheesygri

Also, for the other recipe site.
I wanna start cooking, so I can choose what I eat..but..you know..maybe get good an it can impress :lol:
