I don't understand your poll.
There is no core "requirement" for transcoding videos. If you have more cores (ex. intel q6600, amd 9850) you will be able to encode much faster than someone with 1 or 2.
But you already knew that.
Make sure you are using an application that supports multithreaded operations. I believe Handbrake supports 4 cores.

New computer requirements for transcoding 1080p files on the fly
Any suggestions?
I have a ps3 and want to transcode 1080p mkv files on the fly to play on my ps3.
I currently have a p4 2.8ghz w/HT but its 5 years old and it can't cut it.
Should I go dual core?
Tri core?
quad core?
and how much ram?

If your going to build a rig just to transcode MKV's why not just build a HTPC running Xbox Media Center (Works on Linux) with a Nvidia card.

They have added VDPAU to XBMC so now it is able to offload the processing to a video card, you just have to make sure you have a NVIDIA G98 Core and it should work. If you have never used XBMC then you should check it out, its probably the best Media Centre software out there.
