I would recommend monitoring your cpu usage while playing, and as long as your cpu usage is not maxed out, it should not bottleneck the GPU.
HD 5870... This ancient thing.

I have consistent 60FPS with it, but my settings in the game are mostly all low. Hoping I can find a 1060 or 1070 for a steal.

I would estimate your CPU probably wouldn't bottleneck one of the newer gpus, but like I said, if you want to know definitively, check its max and average usage over a typical gaming session to be sure.
Regarding what kind of graphics card you would "need", meaning min card to achieve those settings, I would be surprised if a 1050Ti didn't work out for you.
I am also concerned with the performance in Fortnite for myself, but I am happy with 720p resolution, but I want max frames (to make use of my 240Hz monitor). My current, also ancient, gpu gives me 50 fps ave with 720p, Epic view distance, and everything else to low. What I may end up doing is buying the 1030 listed in another live thread for ~$100 (which would get me =~ 110 fps with my settings), then taking my time looking for the best sale price for a 1060 6Gb card. If I hold out long enough, I will have this card which I can repurpose for a media PC once upgraded, and a 1060, for what is now the current market price of a 1060.

Can anyone point out if I am overlooking something or being overly optimistic to hope for a $100 discount on a 1060 in the next 12 months?

I think there is hope...I just received my Zotac GTX 1080 Mini from the Newegg/EBay Canada Day 15% off sale ($614 all in shipped to Alberta)...been waiting and looking for an RX 580 or 1070 Ti since last November...wasn't looking for this card at all, but jumped on it with like 2 minutes left in the sale! Turns out reviews are decent. As for those worried about border duties etc from Newegg US shipped, this card was supposed to have shipped from the US, but turns out, it shipped from Ontario, FYI. Best of luck.

I found a EVGA Mini GTX 1060 6GB for $339 plus had a $15 code on ebay didn;t know the seller but it can and was acttually from amazon.ca and had full warrenty no tax or anything gotit for $324 after code no tax and was able to regester it for warranty.

A 580 somewhat competes against 1060 6 gig version for non-vulkan games. A 8 gig version of 580 is overkill since it really isn't fast enough for pushing to 4k resolutions. If you need the speed then 580 4 gig version is better for saving money. Or I would just go 570 4 gig version (overclocked by yourself very close to 580 levels) for less.

There is a reason why 580 8 gig version isn't popular. GPU is too slow

I didn’t do much searching for other models, but the 4GB version of this card is $6 more.

I did look at some 570s and they are ~$50 cheaper. Maybe more savings on other vendor sites.

1060 6GB is $380 also, so maybe worth a look?

Sorry for the noob question but the only difference between the two MSI cards is the fan? Spec (and performance) are identical? Seems odd to me that a two fan setup is cheaper than one. Am I missing anything? This seems better than the 580 I spotted earlier.

I have the same question, about to pull the trigger on one of these.

ALso I just realized how immensely stupid MAIL IN REBATE concept is. Such a stupid way to get the customer to think they are saving but trying to play on the fact that a lot of ppl will be lazy to do it
