Some OCR software tries to read spreadsheets into Excel. I would imagine it may not be the greatest, and you would have to be very careful about errors, but you can try. Not sure if any support reading from a PDF instead of a scanner.

Cogniview PDF2XL will do exactly what you're looking for.

It's a bit tricky to figure out at first but there are help videos for each step in the process.
