Did a search and most of the stuff that came up was for wordpress, so I figured I'd make a quick post ...
Requirements
- Non wordpress based site (traditional html)
- Multiple currency denominations (CND, USD, UK, EU, etc.)
- Secure (the more 'verified' and security images to throw around, the better)
- Very, very, easy to use for consumers ....... bonus pts for being easy to use on the backend
- Ideally a one-stop-shop solution
Is there a traditional shopping cart / ecommerce solution that electronic products use?

I've used:
osCommerce
Volusion
Magento
osC, I never ended up actually using, but I set it up, and had the site running, it was hacked. I found osCommerce that it seems like it's kinda falling behind the rest.
Volusion, this is one of the easier solutions, it includes hosting, monthly fee, etc, that's how they make their money. It's fairly easy to use, and support is pretty quick. This is ideal if you want the easiest system with support. Sure you pay a monthly fee, but it's nice to have someone to help you when you needed and not wait in a forum for a reply (osC/Magento)
Magento, I just started using this. It is pretty good. Some say the learning curve it a little steep, but I really didn't find it that much different than osC. Seems to be a bit more supported.
I haven't really compared carts in about a year, so I really don't know what the general consensus is. I don't even know why I decided on Magento, just came to mind and I went with it. I bought a template, edited myself, and turned out pretty well.

I've done plenty. Everything from full blown heavy weights like ATG and websphere commerce to opencart, prestashop and Magento.
The quickest to deploy/configure would be opencart. It also happens to be the quickest and least demanding.
If you want a lot more flexibility on the opensource platform Magento is a great choice but be prepared for a lot of fixing. It never really runs right out of the box. It's also very demanding on server resources compared to OC and presta.
They all support multiple currencies, SSL and are relatively easy to use. Magento being a bit more overwhelming on the backend.
I don't understand what you mean by one stop shop.

I've used CS-cart a few times. Not super-user-friendly on the backend for setting it up but great on the front end. No real issues with it so far...

It's really about which one you feel the most comfortable with. I used PrestaShop for a while back in the day and never had a problem with it.

OpenCart is one of the most user friendly shopping carts I've seen and I've used plenty. It has addons, with paid ones that add a lot of functionality.
