Family wants to go to Europe. Should I take an escorted tour or do a do-it-yourself tour. Escorted tours go through London which we have seen. Also, they seem to spend too much time on the bus on the highway. We want to do Paris,Lucernw, ROme, Venice,Pisa etc.

Defining "family" will help greatly. It could mean small children, teenagers, adults, seniors, etc.
Also how to you intend to travel between those cities?
Also what about budget and time constraints?
I'm assuming you're looking to take a month or two, in which case I'd suggest purchasing a vehicle when you get there and drive cross country. It would make for an interesting family adventure.
Alternately, flying between destinations (and rail within Italy) might be a good second choice. Flights are VERY cheap in Europe.
Either way, if there are youngish children (under 16) I'd strongly suggest no bus tour. Older children might be able to handle it and not annoy others.
Once you get into cities, all of those cities have good mass transit and getting around should be no problem._______________

It really depends on whether you are seasoned travelers or this is the first real big trip. Are you good at organizing? Do you know what you want to see or are you all wanting something different? What countries are you going to? Are you mainly in cities? How long in each spot? Can you do things independently or do you need to stay together as a group?
So, figure those things out and they may help you make a decision on your own.
