The US service center can service most Grand Seiko models. The chronographs have to go to Japan for service.

Odyssey Time in Toronto will replace the batteries. Anything else, they will send to Japan.

I think it depends on the movement, with Spring Drive's being serviced in Japan.

I sent in my SBGA011 for repair back in Feb 2018. It went to Odyssey Time first and then they forwarded it to Japan.

Yes the main hour hand needs to be turned over and over to change the date. The beauty of that is being able to also go backwards on the date as well. Love travelling with the GMT.

Quickset date over a third timezone for me, two is enough for me. I rotate my watches a lot and don't like them to constantly be on a winder.
Any reason to not keep them on a winder?

Just a personal preference for less wear and tear on the movement, but really the Rolex movements themselves should run forever with service haha
