I had a water hammer issue in my house as well. I try purging the water system to get the air out, I tried installing water hammer arrestors, and I also tried strapping down some pipes. Nothing worked.

Then one day my water heater went on me so I had it replaced. Since then I have no water hammer issues at all. Doesn't make sense to me but this may the same case for you?

Install and expansion tank somewhere on your cold water line before the hot water tank and it should fix your problems. When the check valve was added after your new water meter, it turned your system into a closed loop system, meaning, as the water is heated, and it's trying to expand, it has nowhere to go. The expansion tank has an air bladder in it that well absorb some of the excess pressure buildup.

A 3 or 4gal tank would be plenty if you have a 60gal water heater. It should come pre-charged, but doesn't hurt to double check it
