I really liked:
Sonic Adventure 2 (1's cutscenes were terrible and the graphics weren't as great)
Power Stone 2 (quite fun I must add that to my list)
Tokyo Xtreme Race
Virtua Tennis
Marvel vs. Capcom 2
Street Fighter 3rd STrike
Metropolis Street Racer
Outtrigger
SF Rush 2049
NFL Blitz 2001
That's all that comes to mind right now.

Jet Grind Radio - which pisses me off that X360 doesn't support B/C for JSRF
Skies of Arcadia - I bought the GC one after my Dreamcast died but the Cube copy likes to give me "Disc error" during boss fights so I got fed up with playing it.
Soul Calibur
Dead or Alive
Sonic Adventure
Sonic Shuffle - Why will they port the other Sonic games but not this one? I found it way more entertaining than the Mario Party games.
Grandia II
Shen Mue
