A little OT, but I have a question: Sushi is a bit tricky depending what kind you are making, but isn't sashimi generally just cutting up the fish? You may cut it a certain way, but isn't it just that (like for regular fish: tuna, salmon, etc)?

I got my friend a sushi course for his b-day and he told me the only real requriement for sushi grade fish is freshness. So, for that you may want to try a couple of asian markets, Big land farms(West of Mavis and Burnamthorpe) or H&H Food market(Burnamthorpe and Creditview), basically go to the fish section and point at the fish you want and they kill and gut it right there. Good luck

Korean town
Cheap sushi, good qualify. Even my japanese chef friend buys from there.
Try the "oil-fish", I am not sure what the english name is. Anyways, its tastes very fresh and the texture is quite unique.
I'm talking about the Christie Korean Town BTW.. Both of the big supermarkets have it, but I always go to smaller one.
