This is for the first weekend in May.
I was wondering if there is a suitable auto rental where I could borrow the car at 6 or 7 in the morning instead of waiting until 9am. It's a full day drive and I'd like to get an early start. Of course there is the option of paying for an extra day, but just exploring if there is a better alternative.
Also if anyone has a recommendation on rental companies generally, I'm all ears as I've never done this before. Was planning on using the rental insurance included with my credit card, which I think covers collision only (may top up with more insurance from the rental company). Not picky about the car, as long as it's big enough for a 6'1" person to sit in for 14 hours each way and has good fuel economy. I was thinking one size up from the smallest car class so there's a bit more room but but with nearly as good fuel economy and nearly the same price.

Where are you located?
The only places open that early would be the airport location. But airport locations would add some airport fees that are not usually needed at off-airport locations. If you are not set on a particular location to pick up, can try priceline or hotwire to get good rate.
You can't get a car that is both small and big. But even with a small car, just push the driver's seat back.
Most rentals give unlimite milage, so driving 3000k is not an issue. Just check if you want to go out of province that there is no restriction.

You need to rent (pay), not borrow. Check with your own car insurance about rent car coverage. You may already have coverage.
Yes airport is probably the only option to get a car at 6-7am. Or just rent from the night before and if necessary pay for 1 more day.

Spring for an extra day and pick up the car early, and enjoy the peace of mind. You'll have an opportunity to check the car over before you leave, and if necessary, ask for another car. My dad rented a car for a trip to the Maritimes. Good thing he picked it up the day before; the first model they assigned to him had a damaged wheel. No way he would have made it there and back without trouble.

Just rent it the night before. I would recommend getting the optional no liability coverage by the rental company if your credit card doesn't cover everything. If you have something small like a stone chip in the windshield, some locations (regardless of company) will go after you if you didn't get the optional coverage. Either way you get screwed, but at least it's cheaper to pay the optional coverage. Check to see what's covered by your credit card.

3000K miles, that's 3000 thousand = 3 million kms. That's a lot of travel!

Must be an American, with such good math. (hint mile <> km )
