what used to come standard with so many LCD monitors (back when they were backlit by CFLs) now is so rare. is it really that difficult to drill 4 holes at the back on the monitor?

Two words, "Cost optimization".
Buy a more expensive LED backlit LCD targetted towards business/embedded customers, and they still come with the VESA "holes".
Its a little more than drilling holes; the internal support structure must be made of a metal rigid enough to support the entire screen from the holes. Which takes more material, more weight, more cost. Manufacturers basically are producing LCD screens at almost zero profit, so they cut corners every way they can. 99% of "home" users never use the VESA holes, so why bother with them?

They're cutting down on thickness and on cost, especially for the budget models where most buyers don't care about VESA mounting. Any of the better monitors still have VESA mounts, such as the Dell UltraSharps

As we want things cheaper and cheaper, the vendors must do everything they can to reduce the price. From a construction point of view, the back of the monitor will need to be much stronger (even re-enforced with a metal plate to be subjected to the forces of a VESA mount + being pushed on a daily basis.
OP just needs to pay a little more. I think Dell's P (Professional) and U (Ultrasharp) lines should all have VESA mounts. (Call and check with Dell).

Check the specs for VESA compatibility. It should list 100x100, 200x200, etc.
