i have one. the defender series. protects the iphone nicely, especially with 2 and 4 year olds who drops the phone

I didn't understand the hype either until I could not find a nice case to protect my Samsung Galaxy S3 and only Otter had the best one, a nice white one that protects it from virtually everything, it even came with a screen protector.

I have a commuter. I prefer Incipio but Otterbox has port covers which was a deal breaker for me. But I hate that the Otterbox has a cutout just for the Apple logo. From my experience quality is crap too... I've had it for less than a year and the plastic cracked, silicone ripped, stained, started peeling and I'm not even hard on it. Had that one replaced and now the silicone is stained and falling apart again on the new one. Now I have to look for my receipt to get it replaced again. At least the customer service is great.
In an ideal world I wouldn't have any bulky case. I'd only have front and back protectors on to prevent scratching. Maybe a nice metal bumper.
I'm going to guess that part of the reason they're popular is because carriers seem to push them. They all have them in their stores and booths (Best Buy etc are the same too). People get their shiny new toy and the sales associate tells them it's the best case and they "have" to get it so they do even if they don't need that kind of bulk and protection.

Otterbox is decently priced mainstream case. However spend a little more and check out the iproof case ($80). My friend dropped her iphone in a costco parking lot full of slush last winter, and it got ran over and no water damage detection paper'turned' colour either.

I have both the defender and commuter for my iPhone, dropped it a handful of times and no damage whatsoever

Because it's a solid case, so solid that I only buy phones that Otterbox makes cases for. I used to find it bulky and ugly, but the commuter cases are great.
