I have a 360 elite, connected through HDMI to an Infocus IN76 (which supports 1080p).
Specs here confirming 1080p compatibility: http://www.infocus.com/products/projectors/IN76.aspx
However in the xbox settings, under display, I can only choose from 480p, 720p, 1080i while 1080p is 'shaded out' and not selectable.
I believe the XBOX has the most recent updates since when its connected to the network it prompts to install updates.
I currently run it fine at 720p which is also the native resolution of the projector but want to know why it is not letting me select 1080p.
Any ideas?

That is weird indeed.
I know the Elite is capable of outputting 1080p out of the box.
Check for any settings on your projector, even tho it would be stupid, just check the manual for accepting 1080p. But on the xbox, you might wanna just turn it off and on after playing around with setting with the projector.
Good luck tho, maybe call the projector company if all else fails.

Here's the main reason:
This means that the projector will upconvert/downconvert signals to 720p when possible. The 360 will output the signal in the native format which is 720p and you should leave it that way. A lot of 360 games are in 720p and the 360 upconverts them to 1080p. If it allowed you to choose 1080p, what you would be doing is upconverting a 720p signal to 1080p on the 360 and then your projector will downconvert this signal back to 720p resulting in poor picture quality.Display Technology: DarkChip2™ 720p 12° LVDS, DLP™ by Texas Instruments
Native Resolution: 1280x720
The 360 outputting Native 720p will look much better on your projector so you should leave it that way.
