3 monitors running off laptop

specs of my work laptop:

HP Zbook - i7-6700HQ - 24gb ram - Quadro M600M video

Monitor 1: 32" QHD via Type C usb
Monitor 2: 27" QHD via Type C usb
Monitor 3: 24" 1080p via HDMI

Is there such a thing as overloading the laptop with this setup?

You should be fine, cant overload anything. If it cant handle it, you wont be able to use the resolutions or you get graphical corruption/lag.

2x QHD @60hz and a 1080p should be fine, 2x 4K and 1080p maybe not

Fan noise is a good indicator of load. If the fan is often or constantly on, and particularly loud or noisy, then your computer is loaded (heavily). An objective and quantitative verification can be done using the Windows Task Manager. When it is switched to the details mode, it will show the CPU load and GPU load, and the power usage. If these are not immediately visible, they can be made available by enabling the respective columns. This should give a definitive answer to your question.
