advice on new gaming machine

I am happy building machines, but its been a long time since I built a pure gaming pc

up to now I have been intel/nvidia but as I dont need to do any work on this pc, i dont have that requirement so am free to go for AMD if suitable.

It will be used 100% for:
Racing sims (Project Cars, AC, F1 etc)
Flight sims (P3D and maybe Microsoft Flight Sim)

I want to add VR at some point in the future, possible the Valve Index

I am not that interested in overclocking or insane cooling setups - I want to limit the fuss required on the build

Any suggestions on CPU/GPU combo please?

I guess I am wondering if I should consider a full AMD setup over intel/NVIDIA

As you can see from my game type, I am not really going to need a super high end cpu, rght now I am leaning towards dropping nvidia and intel for the first time in almost 20 years.

Would like to get some suggestions for cpu/gpu combos
