Air Canada has really dirt cheap flights from US cities to Melborne Austrailia for as low as $510 USD (roughly 670 CDN) roundtrip, taxes included!

Depart from:
San Francisco: $510
Los Angeles: $510
Seattle: $530
New York: $568
Dallas: $613

For those familiar with "hidden city ticketing" on the return trip, it is possible to get off at one of the layover cities (Vancouver, Calgary, Edmonton, Montreal, Ottawa, Toronto, etc) instead of returning to a US city.

Another option: according to the fare rules (on ITA Matrix):

Stopover restrictions
ORIGINATING THE UNITED STATES -
2 STOPOVERS PERMITTED IN EACH DIRECTION
LIMITED TO 1 FREE AND 3 AT USD 100.00 EACH.
1 FREE IN CANADA

You should be able to add either a free or very cheap stopover in Canada on the return journey. That way you can use the last leg on a later date. However I wasn't able to find a free option myself, but it prices out fairly cheap (extra $70 USD). Example:

$638 USD
March 6 : New York to Melborne
March 18: Melborne to Toronto
May 22: Toronto to New York

The $70 extra is YYZ airport tax, you have to pay it since you are having a stopover instead of connection.
It should only be $21 extra + HST...

Imho not a good deal, you need to just bring a carry on to Australia in order to do what you’re posting (checked bags do NOT work on hidden city tickets)

With a stopover at your destination you can check bags without any issue. 16 hours in economy though doesn't sound like fun...

Once you do the stopover, US taxes and fees are added, not just YYZ's "airport improvement fee".
