I wonder if this would be good for a purely gaming rig, or get a faster Intel CPU with less cores in the same price range.
For multitasking and productivity this is a beast though.

If you’re purely targeting high FPS, a 10th gen i7 or i9 would be the best.

If you don’t care about a few extra frames and do care about saving money, 3600 or 3700x.

I do 4k gaming on a 3600 and a 5700xt just fine.

I've been eyeing the 3700x and a 2070super for a purely gaming rig. 1440p resolution

No need to wonder. Lots of reviews and benchmarks are out there. If you are CPU limited (lower res, high frame rate), Intel is clearly faster down to 6 cores. If you are GPU limited, then they are about the same.

I’d probably not buy an RTX 2000 card right now with 3000 right around the corner. Grab whatever you can for cheap, ride out the wait then get the new shiny.

4000 Series Ryzen also around the corner. There is always something new coming.

If all indications of a set price hike are accurate, according to some tech websites and youtube videos, this will probably be the last chance to get them at this price point.

Lowest price for this was around $575 unless referring to the price description error on Amazon last July, some ppl copped it ranging from $250 to $450.

For gaming the best value was 3300x but AMD realized it eats into sales of its bigger brothers so they silently killed it off
