Nice, thanks OP. I ordered the 11" one when it was $60.36 last week. I still think the 11" is a better size for everyday use. I'll prob keep one and gift the other.

I read some reviews saying it's difficult to maintain the non-stick? After seasoning do you guys find it remains non stick for a good deal of time?

Not difficult to maintain. Just use it frequently and cook with proper technique.

Should not be different than any other pan. Stainless is harder than carbon steel.

I have a glass cooktop and my carbon steel pan never leaves it. Hasn't scratched the cooktop up one bit.

I have this pan and it's been absolutely excellent. Bacon and eggs. Steaks. Highly recommended.

Not if you're careful. I have a glass cooktop and I never scratched it because I'm careful not to scratch the pan around to begin with.

Matfer is thinner and lighter. You may prefer this or not.

I bought the 14 1/8 inch Matter Bourgeat pan after it was posted here for $78, and it warped during its very first use. I had seen reviews complaining about that, but I guess I tried to treat it like any of my other cookware while preheating it, and it didn't handle that well. It's still fine in practice, but it wobbles like a table with uneven legs, which is pretty irritating after spending that much on a single, supposedly top-notch piece of cookware.
