I bought a bunch of the same large jugs of the buffalo sauce from Costco when they went on clearance a few years ago. I don't use it daily, but I would often BBQ chicken and toss it in the sauce and it was incredible. So even though I use it infrequently, I use a lot of it when I use it. The problem was it goes off. I ended up throwing out 2 half jugs as it just went off and tasted gross. Granted I did not store them in the fridge, but over time it just starts to go putrid, and the taste profile changes entirely. It starts to take on a muted brownish hue and tastes like rancid vinegar. So my advice would be to store it in the fridge (although I have no idea if this would work any better), and use it as soon as possible. Keep in mind it was probably pushing 2 years old by the time I had to dump it, so you've got some time. Having said that, I think I'm in for a jug even though I just bought a half dozen small bottles recently.

I wouldn't buy so much because it's on sale. It'll go bad. Every time I buy the small bottles, they go off before I use them. Because I reach for the good hot sauces every time.

Amazon is recommending Secret Aardvark. It is pretty good and not unbearably hot for most. You can probably find it for $5-6 at your local ethnic shops. Persia Foods, if you are in gvr. Walmart also has a few good sauces.

Do not buy these if you're not addicted to Frank's.
