I am no expert. This is 2 stage, Costco one is 3 stages. anyone care to explain the difference ?

This one only sharpens 15-degree angles and can convert 20-degree knives to 15-degree angles. The white one at Costco - I assume you're talking about the $99 one that gets posted often and not the one OP linked here - can sharpen to either 15 or 20 degrees, but cannot convert.

Better to buy the 3 stage.

I have one 3 stage of this model and one of the 1520, which covers 99% of the knives out there together.

No point in buying 2/3rds the solution. It does only one bevel, which is fine for Asian knives but not traditional and many key European knives. It converts the knives anyway so this is a moot point, because for that case one should buy the 1520.

The double bevel also extends the life of the sharpener (single vs two stage) and the knives as well, because you wear a lot of material just for the single bevel.

The sharpness of the knives remains the same no matter which model you go for.

At the end it's up to the end user what their needs are, just explaining the difference, hope that helps.

I was tempted to buy for my Cutco knives but scared it'll ruin them from the comments I was reading.

Summed up, you lose out on the heavy duty pre-sharpening stage which is recommended for reconditioning heavily worked (read damaged) knives. That's it.
I get it you're very excited about this knife sharpener.

Everyone has damaged knives...unless you hang yours up for display.

It's not just for damaged knives, the initial stage prepares the knife for the next two stages by removing material and creating the initial profile. That 315 model stage 2 is going to wear out excessively fast and you're going to end up needing to replace it prematurely if you put knives with an irregular profile or as you said damage. The first stage of the 325 wears excessively quicker because the diamond abrasion rollers compensate for the crap initial profile end users feed them.

I work in the kitchen daily and our knives get a lot of use, so once in a while we will have a knife requiring the blade profile to be reconditioned. The trizor 15 is the overall kitchen solution you won't need to go somewhere else for knife servicing. That's why I guess it's critically acclaimed and the one you posted is called the budget version.

Instead of getting the 315, it is highly recommended to get the $99 1520 model with Costco gaurantee and being able to have the benefits of both family of knives.

The Costco one can absolutely convert. Both directions. 20 to 15 is minimal metal loss from cutting edge as it will just increase the bevel. 15 to 20 will grind substantial metal away from cutting edge while reducing the bevel.

For sure - Its super expensive to mail stuff out! Especially since the knives are so damn expensive you wouldn't just send it regular mail - you'd do Registered or Xpresspost with some kind of tracking and insurance. Also - need to factor in long term - if you send it in for sharpening every couple years, etc, versus just sharpening it yourself at home whenever you want.

Costco has the 3 stage for $99 as well. Is there a difference between these two?
