The only reason I own any TUO knives are because I got them either for free from amazon with a coupon or for under $6. The high reviews are likely due to lots of people basically getting these knives for free.

Bought this nakiri and a kiritsuke. $49 coupon for the nakiri and $68 coupon for the kiritsuke.

A santoku knife is a chef’s knife with a broken tip, so it is fixed by grinding the tip to be more round and shorter.
A nakiri knife broken and shorten chef’s knife or a wear down thin Chinese chef’s knife.

These are AUS 10 core with Damascus pattern heat treated and liquid nitrogen cryogenic harden to 62+ hrc. AUS 10 are Japanese made steel with Damascus cladding that come in sheets. Most knifes are made by stamping out the blade, add hammer finish, straighten, heat treat, welding to an handle, thin, and then polish. Finally sharpen the knife. Hoping the blade is thin, straight and flat. Hopefully these two are better than 40 Kiwi #171.
