The flights to Iceland are not operating at the moment so be careful. They will likely take your money, cancel the flight and offer you a voucher. At the moment, you cannot travel anywhere in Europe, at least without going on quarantine for 14 days. Wait a few more weeks and it may be possible for Canadians to go to Europe without the quarantine requirement.
