Carbon Steel fry pan buying advice ?

Hi

I am looking to buy a 11" or larger CS fry pan. Please advice. Budget is approx $80. Dont need fancy brand, looking for most !/$.

Right now with Covid19 everything seems very expensive, shall I wait for a while?

Hi,

Try to get a cast iron skillet that comes with a silicone handle cover, so you don't have to use oven mitts. Got this Lagostina from CT at 50% off.

Everything seems to be sold out or expensive right now. Some good brand are de buyer, matfer bourgeat, vollrath.

I've never purchased from here before but a google search has this De Buyer... looks like a $10 sign up coupon to use too.

I have a couple of De Buyer pans, got them with airmiles when they were supposed to expire. They are very heavy (compared to stainless steel or nonstick) and I don't have a gas range to season them properly so that they would work like nonstick. I've heard Matfer Bourgeat is rated higher than De Buyer due to the angle of the handle and it's a bit lighter. Mine are collecting dust at the moment.

Try seasoning them in the oven. I don't have a gas range either, so did the oven method (thin layer of canola oil all around, stick them in a 450 degree oven for 2 hours, and then let it cool in the oven when turned off). It worked well on mine for a while, but then my seasoning started to come off again.

Fortunately, I was able to ship a couple of Matfers to my brother in the US from Webstaurant Store. Much cheaper and more readily available than here. De Buyer seems to be more readily available in Canada. Costco used to carry them at decent prices, and even Best Buy used to have good sales on them, but both have stopped carrying de Buyer for a while now.

I have the Mineral B ones and it has a silicon piece on the handle that can't take the extreme heat of oven seasoning.
