maybe it was frozen at some point? Cheese gets crumbly once frozen.

Naw, it's because it's aged more - chemically or otherwise. Do you have a reference for this "chemical" aging? Do you mean rennin? Most commercial cheese is made with "artificially" cultivated bacterial cultures and rennin.
