For anyone looking for an alternative method, I have been using a stainless steel saucepan to make cheesecake.

Line the bottom with strips of parchment paper before baking and then use the parchment to lift the cake out of the pan when done.

It works great, comes out perfect and saves space in my cupboards.

I discovered this technique by accident when I didn't have the size pan I wanted. After the success I have had I find this method preferable to purchasing a dedicated pan for this purpose.

Have the instant pot brand springform pan and I use the same recipe with parchment paper and it comes out great though I skip the aluminum foil step. The top never cracks and it's always a hit with coworkers plain or with seasonal fruit sauce on top!

GF AND VEGAN CHOCOLATE CAKE




GF and Vegan chocolate cake

176 g Walnut flour
4 g salt
189g sugar
20g cocoa powder (regular Valhrona)
4g baking soda
5g vanilla extract
71g vegetable oil
222g cold water
15g vinegar

1. Sift flour, salt, sugar, cocoa powder and baking soda.
2. Stir in oil, vinegar, and vanilla. Scrape sides and mix until smooth.
3. Let the mix rest in the fridge (better to make it the day before)
4. Spread the mix evenly on a very flat sheet pan with 3 inch height or a 3 inch high round mould
5. Use bake setting on InstaPot.

Vegan ganache

118 g coconut cream + 20 ml Water (blend the water and the cream well)
215 g Valhrona Manjari Dark chocolate
53g glucose

1. Bring the coconut cream and the glucose to a boil
2. Pour over the chocolate. Let it melt a bit and blend it with a mixer.
3. Let it set a bit before use

Building the cake

1. Use a tall cake frame/mould, cut 8 inch square cake with ½ inch height.
2. Spread 130g of ganache (still runny) on the first layer of cake
3. Repeat 2 times
4. On the top layer of ganache make some shapes with an offset spatula

Can anyone comment on using a cheesecake pan vs springform pan? It seems like their springforms are also a bit easier to use due to not needing to insert the bottom into the lip, it has a larger base instead.

Thanks. Bought the 7 inch push pan and 6 inch spring form.

There's also a 3 pack cake Pan set for 19.xx which looks like a good deal.

Bad news for me on being sold-out of the 7".
But good news too...
I was dreading having to stock many more cooking ingredients in the home - and concerned about how to remove that glue left from the label.

I just ordered the 10" cheesecake pan since they were out of 7"; my fiancé is pretty big on no-bake cheesecake and I'm sure I'll get good value for $20

I haven't used the Fat daddios springform pans but the design looks pretty neat. I hate using other springform pans that you have to insert the base into the lip, I've found with even more expensive ones like Calphalon, I would get some leaking from the base. Curious to hear if anyone else has tried the Fat Daddio's springform pans

I emailed them over the weekend, as I had 1 order come (pizza pan), but not another (fat daddios).

Due to stock levels and delays on shipments from our vendor last week. We are a bit behind on getting these Fat daddio orders out.

The shipment arrived this morning (Sept 7) to the warehouse and the team is trying to unpack the products and get them out to shipping as fast as they can.
