I bought this about two months ago and it's a great sharpener. I've lent it to family and have heard nothing but positive feedback on ease of use and sharpness of knives. Worth it for $99.

The ever popular Model 1520 Chef’sChoice 3-stage Electric Knife Sharpener is back in stock at Costco.ca. After resisting for three or four times during the previous time periods when it was available and discussed here on RFD, I finally caved and purchased it. 597 available at the time of this posting.

This is a really good option for those who don't like using a traditional whetstone. Personally I prefer using a whetstone to keep my knives sharp, but if I wanted to splurge, this is what I'd get.

My knives badly need sharpening, but I'm scared to use something like this on my $300 knives. Does anyone have any experience using this on high quality japanese knives?

I FINALLY got one...so happy! I've been trying for over a year and keep missing it - I clicked thru everything so fast, I didn't even check if it was the right model, etc. - just paid to get my order in. Went back and whew! I actually checked the previous link earlier this week to see if they restocked - ha! GL all!

From my research there's no way this will beat a whetstone with a developed technique. However developing that technique takes time and practice whereas this is pretty skill-less and fast.

Bought this and the Victornox 8inch chefs knife. Great combo imo.

I touch up the blades weekly, what a difference.

Main advantage of this to a whetstone is convenience. I could sharpen all my knives before you can prep a whetstone.
