This might be of interest to fellow brisket'ers.

The Chef Show on Netflix has an episode #7 with Aaron Franklin of Franklin BBQ. Great seeing how he trims and preps a brisket for BBQ.

Bon Appetit on YouTube also did a 24hrs at Franklin BBQ show.

Both great watches IMO.

Spotted some brisket in Newmarket Ontario costco yesterday.
10.99 per pound
All pieces were $60+

I'm still perfecting my smoking techniques on cheaper meats.

Would really hurt to screw up one of those briskets !

Whyyyyyyy can't Guelph Costco get a load of these in, really want to give one a go in the Kamado. I've done a few packer briskets from Longo's at $6/lb with great results, bet a Prime one would be next level mmmm

Just to clarify, per pound, or per kilo? Costco is definitely Prime at ~$10-11/kg. Certainly better value than a $6/lb packer!

I definitely didn't pay a good price, just showing how much better of a deal these would be than what I have paid in the past for a brisket. I assumed he meant 10.99/kg

As of Monday 17th they had about a dozen on the shelf.

Just edited OP to include provinces that it’s been spotted at(AB, MB and ON). Also added a note that ON seems to be getting AAA, not Prime.

For Calgary area; my last Costco visit was last Thursday and there were plenty in stock at Crossiron. I’ve also heard that they’re sporadically available in Beacon Hill.

There has been some at Beacon every time that I've shopped (generally biweekly) for the past couple of months.
I shop right at 9am though, so maybe they sell out by later in the day.
