Any input on the brand/longevity of the product? Haven't heard of this brand of bike before.

Twist shifters, and the Shimano system on it is pretty meh. They can be somewhat finicky and can be difficult to shift. 100% would recommend trigger system at minimum. At this price range, you'd be looking at a Shimano Tourney or Altus.

Infinity use to be Costco’s main bike brand (before North rock came into the picture) from the late 90s to 2012 (I think?) I grew up with about 3 of them. Two of them are still within the household. They are basic but not bad for the money.

Just keep in my the front derailleur only has 36teeth, so your gear ratio wouldn't be great. When you buy this bike, it would be more for comfort than speed.

How long can you return a bike for at costco? If it breaks down 4 months after will they still take it back?

Forever. You might get some stares, but I've seen people return 15 year old BBQs.

Bike descriptions like this one says 7 gears so does that mean it is 21 speeds? Bikes used to say 18 speeds, 21 speeds, etc.

Who can break down the bike thing for me, this one cost 359$, but no shock no disc brake, and the only feature seems to be an aluminum frame.
What makes this 200 more than a Walmart mountain bike (pre-covid around 100$).

I plan to shop for a bike after the covid craze, what top 5 things I should look above Walmart bike's level?

You answered your own question - COVID made it $200 more
