"Rockwell C56°-58°" seems to be quite low for a normally $136 knife? More similar to a $50 knife from my shopping.

I found this article on steel properties of the Cromova 18 enlightening: https://knifebasics.com/detailed-cromov ... el-review/

In summary, in comparison to other common steels, it excels at corrosion resistance and less so at edge retention (which is inversely correlated with ease of sharpening). So, while it'll be easier to sharpen, you'll need to hone and sharpen it (slightly?) more frequently than other high-end knives.

For comparison, the BF deal on Zwilling's 8" Chefs Knife last year (and again in April) has a HRC of 55-58. It also retails in the mid-100s and comes on sale for around $50-60.

Finally, note that Costco.ca currently has the G-2 also paired with the GS-1 for $79.99 just in case you want an alternative to the sharpener.

Not an expert but I believe the Global knives require sharpening at a specific angle,15 degrees maybe. The Chef's Choice will be at the wrong angle. I likely have this mixed up somewhat so someone else can chime in but I believe they are not compatible.

No such thing as a knife requires a certain angle. It's steel and you can do what you want. Lot of ppl will change the original angle and that's fine. It'll still cut well
We're all bozos on the bus until we find a way to express ourselves...

Failure is always an option...just not the preferred one!
