Saw Brisket at the Sherwood Park, AB costco yesterday. I think it was $8.99/Kg. Most of the ones in the cooler were $40-$50. Not as good as GTA prices, but still a good deal.

$8.99 is a good deal, but seems to be the regular sale price. I haven't seen $7.49 before!

It has being $7.49 before tho generally not long. It was reported a long time ago (rumour at least) that the price depends on how new/fresh the stock is. Basically when the stock has being around for a while and hasn't being sold, Costco will keep cutting the price to move it. The regular price seems to be $8.99. I think the rumour was price drop happens after 1 month of stock arriving? Again this was a rumour in one of the many Costco brisket threads posted in the last couple of years.

Here is a recent thread of $7.59 (earlier this month)

My buddy works in the meat section of a Costco in Toronto and basically confirms what you just wrote. I would imagine this is what happens in all grocery stores though. Like some places will just slap a 30% off sticker on slightly older meat.

I was able to find 1 at the Costco in West Island. Sucker was 9kg but I'll cut it up and freeze it.

I have been spoiled by the last Costco prime ones. I was able to pick one out that was highly marbled but didn’t have a ton of fat you needed to cut off. It was my first smoke and I was told by friends to expect 17 hours whereas this was done in just over half that time and could have been removed a bit sooner as the flat was cooked more than I wanted despite wrapping it at the stall. Anyone recommend cutting the point off sooner?

I use a Traeger pellet grill but found it cycled up and down from 200 to 225 so I was expecting a longer not shorter cooking period. Our Chef Alarm wasn’t working so we did this the old fashioned way with a handheld probe.

Did mine on the egg last weekend. Trimmed it, put a generious amount of equal parts salt+pepper on it. Put a pan of water in the egg, got it to 225 with hickory+oak wood chunks smoked it for 15 hours without even opening the egg for the first 12 hours. Turned out really good (maybe a slight bit dry since I didnt spritz or wrap), but it had a fantastic bark, Forgot to grab a picture. It was the first time I ever smoked brisket before.

Saw about 10 in the cooler at Balzac Costco (Calgary) at $7.49/kg Wed night. If you can find it, definitely grab it. I'm four Costco briskets in on a Weber Smokey Mountain and they've been great every time.

Did anyone know if the briskets are still at Costco recently? Haven't left the house for a while, but really want to fire up my smoker after seeing the recent news on Adamson's BBQ.
