The price is YMMV - its anywhere from $8.99 to $11.99 depending where you are.

Saw yesterday they have brisket at willingdon, but at $11.99 per kg
Smallest pack was 5.244kg, so $62.88. I am seriously tempted to pick one up to SV for 36 hours.

I did 155f for 30 hours (as per a ton of SV recipes) and ended up dry.

Maybe next time I should try 135f.

Set your precision cooker to 135°F (57°C) for brisket with a tender, steak-like texture, or 155°F (68°C) for more traditionally textured brisket that falls apart when you pull at it. Add brisket to water bath and cover it with a lid, aluminum foil, or table tennis balls. Cook for 24 to 36 hours at 155°F or 36 to 72 hours at 135°F. Allow cooked brisket to cool at least to room temperature before proceeding (an ice bath can speed up this process). Brisket can be stored in the refrigerator at this stage for up to 1 week before finishing.

Picked up a case of brisket from the Toronto business center a little over a couple weeks ago. It was like $10.39 a KG. $8.99 is a really good price.

BC has it, $11 at Surrey this week. Richmond doesnt have it tho so its store YMMV.
