$8.99/kg at Stoney Creek. There was 5-6 there this afternoon after we bought one. We've never made brisket before and am excited to try. We'll be smoking it on the Kamado Joe next weekend.

Any thoughts on whether I should cook the entire thing and then freeze that or portion it beforehand and freeze some uncooked?

What I like to do is cut it in 2 or 3 pieces, then smoke it in a kamodo or smoker for 3-4 hours. Then I freeze the pieces in a food saver bag with spices - ready for a 24-36 sous vide.

If you don't have a smoker - a couple tablespoons of liquid smoke does nicely as well.

Costco Oshawa had 2 left yesterday @ 8.99 / Kg

Couldnt convinced my wife to allow me to pick up one; she complained that there is a reason why those 2 remained... too much fat :S
