Easy recipes for chicken thighs?

I've got a family pack of chicken thighs I bought three weeks ago sitting in the freezer and I don't know how to cook it. If anyone has an easy recipe for chicken thighs please share it with me, thanks. Oh yeah, I don't have a deep fryer, I do have an oven and pots and pans.

asian chicken thighs

marinade:
-1/4 cup hoisin sauce
-2 tbls soy sauce
-2 tbls lemon juice
-2 cloves of garlic minced
-some ginger

marinate for at least 30 min and then bake at 400 degrees for 30 min

btw this is for boneless thighs, if they have bones, you'll have to bake them longer

you can basically cook a thigh the same way you would cook any chicken pieces.
That's my 2cents worth

Brown thighs (bones/boneless) in large saute pan, set aside

Cook Onions, celery for 5 minutes over med-high heat (Salt immediatly once you start)
Add chopped red/green peppers, cook 3 more minutes
Deglaze pan with 1/2cup chicken broth, reduce heat to min
Add chicken thighs back to pan
Add 1 Can chopped tomatos with liquid drained from can (or 2 cups chopped fresh)
Add 1 can (1/2 can is also fine) coconut milk
2 Tablespoons curry powder
Stir and cover with lid

Cook for at least 40 minutes, the longer you cook the better the chicken will be

Serve over rice or whole wheat pasta.

Slightly grease a shallow pan and preheat oven to 400F. Coat thighs in seasoned flour (flour + salt + pepper), bake at 400F for 15 minutes on each side. Serve with sweet chili sauce. Make sure the pan is hot when you put them in so you can hear that nice sizzle.

Chicken Stew by Michael Smith from FoodTV.ca.

3 tbsp of olive oil
8 x chicken thighs
1 lb. of cremini or button mushrooms, cut into quarters
2 x Portobello mushrooms, sliced
2 x onions, sliced
1 cup of chicken stock
1 cup of wine, red or white, your choice
salt and pepper

Directions:

Preheat a large skillet over a medium-high heat then add the oil and a single layer of the chicken thighs. Because you will be adding liquid and lowering the temperature of the chicken, this is the only opportunity you will have to add the rich flavours of caramelized chicken - so be patient. Brown evenly on both sides. When they are done remove and rest on a side plate. Pour off most of the accumulated fat.

Add the onions and mushrooms to the pan. Saut

This recipe is technically called "Chicken Breats Pierre" but I have made it with chicken thighs.

Yum!

http://chicken.allrecipes.com/az/Chicke ... Pierre.asp

* 6 skinless, boneless chicken breast halves
* 1/4 cup all-purpose flour
* 1/2 teaspoon salt
* 1 pinch ground black pepper
* 3 tablespoons butter
* 1 (14.5 ounce) can stewed tomatoes, with liquid
* 1/2 cup water
* 2 tablespoons brown sugar
* 2 tablespoons distilled white vinegar
* 2 tablespoons Worcestershire sauce
* 1 teaspoon salt
* 2 teaspoons chili powder
* 1 teaspoon mustard powder
* 1/2 teaspoon celery seed
* 1 clove garlic, minced
* 1/8 teaspoon hot pepper sauce

1. In a shallow dish or bowl, combine flour, 1/2 teaspoon salt and ground black pepper. Coat chicken breasts with flour mixture. Melt butter in a large skillet over medium heat, and brown chicken on all sides. Remove from skillet, and drain on paper towels.
2. In the same skillet, combine the tomatoes, water, brown sugar, vinegar and Worcestershire sauce. Season with salt, chili powder, mustard, celery seed, garlic and hot pepper sauce. Bring to a boil; reduce heat, and return chicken to skillet. Cover, and simmer for 35 to 40 minutes, or until chicken is tender, no longer pink and juices run clear.

Throw sauce or grill marinade of your choice on those suckers and broil them to perfection.

OR BBQ them the same way.

I like to use a nice Jerk marinade
or one of the PC 'memories' line of sauces.
OR 'Diana sauce'
OR even a nice souvlaki marinade even.

OR fry them up and use the meat in any dish that commonly comes with chicken at a restaurant, like chow mein, stir fry, etc etc.

The ginger adds a lot of taste when steamed with the chicken.
